Regular readers may have noticed my particularly palatable penchant for alliteration, which permeates periodically throughout my posts. (Thank you 6th-grade English!). Today I’m thrilled to keep alliteration alive by sharing some favorites that all begin with the letter S.

All the makings of a crunchy munchie: Salty-Sweet Halloween Chex Party Mix

This weekend, two of Ben and I’s best friends – Nick and Lindsey – are coming to visit, and I’m having way too much fun planning fun Halloween-themed treats. Overfeeding my guests is a habit I’ve never cared to break, and I suspect this weekend will be no exception.

First up on the weekend eats: this healthier take on HALLOWEEN CHEX PARTY MIX. This yummy munchie combines two flavor profiles that, together, throw a serious taste party: SALTY and SWEET. I’m a supreme sucker for foods that marry the two.
  • Chocolate Covered Pretzels: My absolute downfall. I have to physically restrain myself, or I will finish an economy-sized bag in a single sitting.
  • Peanut Butter + Anything Sweet: honey, bananas, grapes (try it), and these fabulous Peanut Butter and Jelly Bars top the list, but I do not discriminate.
  • Salted Caramel Everything: Ice cream, brownies, popcorn, and perhaps the mother of all: salted caramels from one of my culinary heroes, Ina Garten.

My healthier version of SALTY-SWEET HALLOWEEN CHEX PARTY MIX also is a member of one of my favorite food groups: SNACKS. I am a snack fiend. A 20-something adult with a big girl job, I still channel my inner-Kindergartener and pack both morning snack and afternoon snack every single day. Really, it’s for the benefit of my co-workers; I morph into a veritable Oscar the Grouch when I’m hungry, which is every two hours. Just ask poor Ben.

Salted Maple Roasted Peanuts make this Salty-Sweet Halloween Chex Party Mix 
too tasty to stop at just one handful
This healthier take on SALTY-SWEET HALLOWEEN CHEX PARTY MIX is a festive snack. It contains none of the extra butter and additional corn syrup called for in typical party mix recipes but is still oven toasted for that special flavor and crunch. SALTED MAPLE PEANUTS exemplify salty-sweet flavor balance and are roasted with pure maple syrup.  Candy corn adds Halloween flair, and while it may not be the healthiest ingredient, I love those crazy, multi-colored triangles. They come but once per year, so we should celebrate! Plus, candy corn and peanuts are a weirdly fabulous combo.
I gave myself a high five for organization when I made this healthier SALTY-SWEET CHEX PARTY MIX in advance of my guests’ arrival, but my planning ahead has back fired. I keep snitching handfuls and have now finished half the batch. Whoops.

Healthy Salty Sweet Halloween Chex Party Mix Recipe
This healthier Salty-Sweet Halloween Chex Party Mix is a scrumptious addition to any spooky soirée

Salty-Sweet Halloween Chex Party Mix

Yield: About 5 cups mix

Salty-Sweet Halloween Chex Party Mix

Ingredients

  • 1 c. peanuts
  • 2 T. pure maple syrup
  • 1/2 tsp. kosher salt
  • 2 c. cinnamon rice squares (Cinnamon Chex)
  • 1 1/4 c. mini pretzel twists
  • 3/4 c. candy corn
  • Cooking spray (preferably butter flavored)

Directions

  1. Prepare the Salted Maple Peanuts: Preheat oven to 375°F. In a small bowl, combine peanuts, maple syrup, and salt, stirring until peanuts are fully coated. Spread peanuts on a baking sheet covered in parchment paper. Roast for 16 minutes, stirring once half way through. Remove from oven and let cool slightly, until comfortable to touch. Break apart while peanuts are still warm.
  2. Prepare the party mix: Turn oven down to 250°F. Coat a large baking sheet with cooking spray. Spread cinnamon squares and pretzels in a single layer on baking sheet, coat again, and roast for 30 minutes, stirring twice during baking (once every 10 minutes). When toasty and lightly brown, remove from oven.
  3. Toss all ingredients together with candy corn. Munch away!
